The most common mistake is choosing a grade by name alone. A drink where matcha is the hero needs different qualities from a baked good where it's one ingredient among many. Begin by asking: where does this matcha need to perform, and how prominent should it be?

The three grades at a glance

Ceremonial is the smoothest and most vibrant. It shines in premium drinks, hotel lounges and signature lattes — anywhere the matcha flavour and colour are front and centre.

Premium is the versatile all-rounder. It performs well across café menus, fresh confectionery and chocolate, making it a dependable everyday choice.

Culinary is built for the kitchen. It delivers dependable colour and a robust flavour for baking, desserts and high-volume use — where a more delicate grade would simply be lost. As with any matcha, prolonged high heat can soften the green, so colour is best preserved by limiting bake times.

The best grade is the one that fits your recipe, your taste profile and your volume — not the one with the most prestigious name.
